Peanut Butter Oatmeal Squares
These tasty morsels are so simple to make and taste decadent yet still contain wholesome ingredients.

PEANUT BUTTER OATMEAL SQUARES
Ingredients
- 250 g peanut butter preferably smooth
- 150 g maple syrup/honey or use golden syrup
- 1 tsp vanilla extract
- 2 eggs
- Pinch salt
- 30 g wholemeal flour
- 90 g oats
- 1 tsp. bicarbonate of soda
- 100 g dark chocolate chopped
Instructions
- Oven 180c.
- Mix the peanut butter, syrup/honey and vanilla. Beat in the eggs then salt.
- Add the flour, oats and bicarb to the wet ingredients and mix in well.
- Stir in 75g of the chopped chocolate then spoon the batter into a greased/silicone 20 x 20cm baking tray. Spread evenly.
- Bake for 15 - 20 mins. If you wish to have soft set gooey squares, bake for 15 mins, if you would prefer a cake type texture, bake longer but no more than 20 mins.
- Melt the remaining 25g chopped chocolate in the microwave until just starting to melt (about 30 seconds) then stir. If it needs to melt further, just do this in 10 second bursts. Alternatively, melt in a heatproof bowl set over pan of barely simmering water (bain marie) making sure the chocolate bowl does not touch the water in the pan. Once melted, drizzle over the traybake.
- Leave to cool in the baking tray.
- Cut into squares. These treats are best served warm with cream or custard or left to cool to eat on their own.

This recipe uses less sugars than many treats.
These treats use dark chocolate which contains more of the beneficial cocoa solids. Cocoa solids are full of antioxidant flavonoids which help to ‘mop up’ free radicals in the body. Free radicals cause inflammation, ageing, chronic disease and some cancers. Cocoa is also a source of phenylethylamine which stimulates the feel good endorphins and may even help to boost serotonin production (low serotonin levels are associated with depression and anxiety).
