Fluffy Pancakes

Not satisfied with traditional pancakes this year, my not so little chef wanted some fluffy pancakes as eaten by her favourite You Tube bloggers. Although these ones don’t go down the route of using wholemeal flour (the pancakes would be too dense), I have used Greek yogurt for additional protein and served these with lots of fruit for antioxidant vitamins and soluble fibre.

They are easy to freeze too (see below) so you can make a large batch for another time.

Nutritional Benefits:

Blueberries contain antioxidant vitamins C and E, are cancer preventative, help to boost memory and fight bacteria. Antioxidants help to destroy harmful free radicals that damage cells and increase the risk of disease. Like all fruits, they are a source of soluble fibre, essential for good gut health.

The yogurt and milk contains fat soluble vitamin A and vitamin D as well as calcium; all important for good bone and tooth health and offer vitamin B12 and are a source of protein. Dairy foods in the form of yogurt DO contain saturated fats but these have been found to have a neutral effect on the cardiovascular system (not like previously thought). In fact, there is much evidence that the saturated fats in dairy foods may reduce the risk of heart disease and type 2 diabetes.
