This is such a simple dish using the zesty flavours of the lemon to lift the salmon.
Oily fish such as salmon contain iron (for healthy blood), phosphorous, selenium, iodine, sulphur, many B vitamins as well as vitamins D and E. They are also a source of hearth healthy omega 3 fatty acids which have been shown to reduce the risk of heart disease, strokes, depression, Alzheimer’s disease and auto immune diseases such as rheumatoid arthritis and lupus.
There has also been several studies of the positive effect of omega 3s on ADHD and some behavioural/attention difficulties. As the brain is made up of two thirds fat with half being omega 3, consuming these fatty acids helps to keep the brain healthy and improve concentration.
